Gold Star Jewellers

I went into Gold Star in Bonnie Doon mall to buy liquid metal polish (to immerse silver jewellery) & was sold a cleaner that did not polish/clean silver. I returned the item to explain he gave me the wrong thing. He said he had what I needed, realized he'd 'run out' and said to come back in a week to exchange them, also suggesting that if I had any old gold/silver I didn't need/want, to take it in & he'd buy it. I went back with cleaner & old jewellery same story with the liquid metal cleaner, so he ended up giving me his (already used) jar; fine. He took my jewellery & didn't provide any weights, or variance between the Karats of gold (10 vs 18). I also said I wanted the gems back that were in the pieces & he said that was possible & to go back the following week for them. I went back, he was having 'car trouble' so wasn't in & I'd have to go back. I did, he couldn't find them, then said they were all broken from the removal process so he'd buy them from me, besides they weren't really worth much. I said I still wanted them. He said he'd have them for me & to come back later that week. I did... he said he didn't want them to get broken during the removal so his goldsmith had them & to go back the next week to get them then, taking my name & number (for the 4th time). He suggested that because I've been on crutches with a broken/sprained ankle to wait until he calls me for p/u. I have not heard from him. I was naïve & am embarrassed that I have clearly, been scammed. What recourse do I have?
