He makes the pit smoked bbq without the trays. He requires the staff to underweight the teriyaki chicken and the strips as well as the brisquit. At night he requires staff to put the food on the floor in the walk in cooler. The guacamole is left on the bar for weeks at a time without being changed. He doesn't check temp of food on bar. He simply has everyone fill the log out using random numbers that are within the safe temps. He spits his tobacco juice in trash cans and sinks
