Coles Supermarkets Australia - stopped for shoplifting

Hi on the 5th of September I had 1st shopped at Woolworth's Parkmore I placed the items in a coles freezer/ cold bag, I then shopped at Coles Keysborough my trolley was quite full.
Once I paid and left the store 2 undercover security guards stopped me and said I had put something in the above bag and something in my hand bag.
I had told them there was nothing in the said bags they took me into a room at the back of Coles telling me to be truthful or they would call the police, I asked one of them to scan the items from Woolworths as I had no receipt he had gone and done so, while the other one went through my handbag he said he had been following me for 30 mins, there was nothing in my hand bag what he did see was me taking gum out of my bag.
He took my licence, photo and made me sign a form of which I should have read though it myself but the talk of police many times made it uncomfortable.
By then the other man came back and said they scanned at Coles, I had asked him to look at the surveillance cameras as what I did have Coles were out and have been for awhile out of stock, its then I realized they had filmed me with there mobil phone, he then got annoyed that I asked to see what they think I stole? he left the room came back 10 minutes or so and said if Coles not give a [censored] he won't either? I don't no what that means? I can say once all of my shopping was out of the trolley there were chicken pieces I got from the Delhi worth $5 and was a complete oversight on my behalf and had nothing to do with the reason they stopped me in the 1st place.
They said I could go pay if I wanted to ($5 chicken) on which I did.
I don't like the fact that they have me on there mobil phone and my address I do not no them as they didn't show me any name tags or who they were? I now no my rights when it comes to this and do intend on taking it further but am interested in a reply from Coles before doing so
